Kefir honey cake with custard

Honey cake is very easy to prepare, so it is often prepared at home for special occasions. Kefir cakes turn out to be lush and more like a biscuit, but they are also well soaked, and the cake as a whole turns out to be very juicy.

Mix the sifted flour, baking powder, sugar, kefir, eggs and honey, you can beat all the ingredients with a mixer.

Divide the dough into 2 parts. Bake two cakes in the oven at 180 degrees. You will need 35-40 minutes.

Cut each cake into 2 parts.

Wash dried fruits and pass through a meat grinder. Chop the almonds.

Beat the egg and sugar for the cream. Then pour in milk, add flour, stir until smooth. Pour this mixture into a heavy-bottomed saucepan over medium heat. Bring the mixture to a boil, stirring constantly, then reduce the heat and simmer until the cream begins to thicken. The cream should resemble very thick sour cream. Remove cream from heat and cool. When the cream has cooled, add butter to it and beat until an airy mass is obtained.

Put the cake on a flat dish, brush it with cream, put dried fruits on top, cover with the next cake. Do this with all the cakes, forming a tall cake.
