Honey cake with nuts

Honey cake with nuts - a magical fragrant honey dessert with sour cream and walnuts. Soft, gentle, it just melts in your mouth! In order to enjoy its unique taste you will have to work a little, but it will be worth it!

Put honey in a deep saucepan, bring it to a boil over medium heat, stirring constantly. Then add soda, sugar, salt and water to the honey. Cook the mass over medium heat until the sugar dissolves, so that the mass acquires a dark orange color.

When the mass has darkened, remove it from the heat and add butter. Mix the ingredients and leave the mass to cool to 40-45 degrees for 20-30 minutes.

After the mass has cooled down, add eggs to it and mix well. Then sift the flour and knead well with a spoon. The dough turns out to be loose and a little sticky, do not overload it with flour. We leave the dough for 1-2 hours so that the flour swells a little and the dough thickens.

After the dough was infused, it became a little thicker and no longer so sticky to your hands. We spread the dough on a floured table, divide into 5-6 parts. Roll each part with a rolling pin into a thin cake, 2-3 mm thick. To do this, we determine the shape and diameter of the future cake, cut off a sheet of baking paper and roll out the dough on it, sprinkling the dough and rolling pin with flour.

We prick the rolled cake with a fork so that it is even and no bumps form on it. Put the cake on a baking sheet and bake for 3-5 minutes in the oven preheated to 190-200 degrees. During this time, we roll out another cake.

We put the finished cakes in a pile on top of each other. While they are cooling, we will prepare the cream. In a deep bowl, combine sour cream, sugar and vanillin. Dry the walnuts in the oven at 140 degrees for 5-7 minutes.

We start assembling the cake: lay out the cake, grease it generously with cream, sprinkle with chopped walnuts and cover with the next cake. Thus, we sandwich all the cakes. The last one is covered with cream, and for decoration you can pour melted bitter chocolate on the cake and draw a pattern as in the photo with a toothpick. The finished cake must be refrigerated for 5-6 hours, and preferably overnight. During this time, the cakes will be well saturated with cream, they will swell a little and the cake will become soft and very, very tasty. Enjoy your tea!
