Merengue roll without starch

Merengue roll can be baked without starch. Starch is added to the meringue to retain moisture and give it the soft texture of a crispy soufflé unlike regular meringue. In this recipe, you are asked to replace the starch with nut (almond) flour and add coconut. To prepare the flour, fry the nuts in a skillet and grind them in a blender. Cooking a roll with raspberries and butter cream.
