Meringue roll with blueberries

The meringue cake is baked in the oven. Then a cream of curd cheese, sugar and cream is laid on it. Berries are added on top and everything is twisted into a neat roll.

We start by making the cream. Pour heavy cream into the mixer bowl and add sugar. Whisk until soft peaks.

Add curd cheese and beat thoroughly until smooth.

Next, we prepare the meringue. Beat the egg whites with a pinch of salt.

Add sugar and beat at high turns for 5-7 minutes.

Cover the baking sheet with parchment paper and put the whipped egg whites on it. Spread evenly over the surface. It should turn out to be 1 cm high and 25x30 in size. Preheat the oven to 180 degrees and bake the cake for about 15-20 minutes.

Cover the meringue with a sheet of parchment, gently turn the baking sheet over and remove the paper. Let the cake cool completely.

Lubricate the cake with cream and leave about 3-5 tbsp. Next, spread the fresh blueberries evenly.
