Begin to beat the cooled proteins at low speed of the mixer with the addition of salt and lemon juice, gradually increasing the speed. Continue whisking the whites and add the powdered sugar one spoon at a time. Add cornstarch and mix thoroughly. The result is a dense air mass. When the container is turned over, the proteins remain in the bowl.
