Separate the whites from the yolks. Conveniently and carefully, this can be done by puncturing two small holes in the eggshell. The white will slowly drain, gently separating from the yolk. Beat the egg whites at high speed until frothy. Then gradually add brown sugar. By adding in small portions, the sugar will dissolve faster in the protein. Beat until a dense mass is formed. Add powdered sugar to the contents and beat again, but at a lower speed.

Place the baking paper on a baking sheet and distribute the meringue mixture. Align with a spatula so that the mass is quadrangular. The thickness of the meringue should be the same everywhere. We send the baking sheet for 7 minutes to the oven, preheated to 200 degrees. Reduce to 150 degrees and continue baking for another 10 minutes.
