Baking a meringue roll in a gas oven has some peculiarities, because the minimum temperature in such an oven is not set below 150 ° C. It is advisable to have a thermometer. The door can be left ajar while baking. It is important that the crust is golden brown and soft inside. The technology for making meringue and cream remains the same.
