Not so long ago I was pleasantly surprised to learn that caviar is not only squash or eggplant, but also beetroot and even carrot. I suggest you cook carrot caviar for the winter today. Such a piece can be used as a frying for a soup or even as a snack by spreading caviar on a piece of fresh bread.

Prepare the required ingredients.

Peel the onions, rinse under cold water, and then chop finely.

Wash the carrots thoroughly, and then, using a vegetable peeler, peel them. Cut the peeled carrots into small pieces and place them in a blender bowl.

Grind until smooth. If you do not have a blender, this procedure can be done using a meat grinder. But this will significantly increase the cooking time.

Peel the garlic, rinse in cold water, and then chop with a sharp knife. You can also use a press or fine grater.

Put the required amount of tomato paste in a small container and pour a small amount of drinking water, mix thoroughly until smooth.

Put the chopped onions in a deep glass container, which is used for a microwave or oven. Then add tomato paste, pour in the required amount of vegetable oil, and also add bay leaves and black peppercorns. Put the container on medium heat and simmer, stirring occasionally. After the mixture boils, reduce heat and simmer vegetables for another 25 minutes.

Pour a small amount of vegetable oil into a deep frying pan and put the chopped carrots, put on medium heat, and stirring constantly, fry for 3-5 minutes.

Then pour in a small amount of hot water, cover with a lid, and simmer the carrots until soft for about 10 minutes.

Then transfer the carrots to a container to the onion, mix thoroughly and place in a preheated oven at 180 degrees. Cook the carrot caviar for 10-15 minutes.

Remove the carrots from the oven a few minutes before cooking. Add garlic. Place the container with carrot caviar in the oven for another 5 minutes.

Prepare the jars, wash them thoroughly with warm water and baking soda. Sterilize the washed cans in the microwave or in a water bath, pour boiling water over the lids or boil them. Gently remove the hot carrot caviar from the oven and place in sterile jars.

Tighten the sterile lids well, and then turn the jars upside down, wrap them up with a warm blanket or towel. Leave in this state to cool completely for about 10 hours. Then, turn the jars over and move them to a cool, dark place for storage. Ready carrot caviar goes well with any meat dish as a side dish.
