Carrot orange cupcakes

Carrot baked goods are an incredibly delicious dessert that you must try to prepare at least once and you will fall in love with it. Many people do not dare to cook baked goods with carrots, guided by the fact that they dislike boiled carrots. But baking is a completely different matter! It always turns out to be tender, aromatic, with a lot of spices, citrus and walnuts. If you do not reveal the secret that you added carrots to the dessert, the guests will not even guess!

In a bowl, combine eggs, sugar, orange zest and juice, vegetable oil. Mix all the ingredients with a whisk until smooth.

Then add finely grated carrots and coconut to the dough. Put the walnuts in a dry frying pan and fry for 3-4 minutes. Then chop the nuts with a knife and send them into the dough. Add sifted flour, baking powder and baking soda, vanillin, salt and spices to a bowl. Knead all ingredients until a homogeneous dough is obtained.

We put paper inserts in a baking dish for cupcakes and fill them with 2/3 of the dough. We put the form in an oven preheated to 180 degrees and bake the cupcakes for 15-20 minutes. We check the readiness with a toothpick or a small step.

We take out the finished cupcakes from the oven and let them cool for 10-15 minutes, after which we take them out of the mold and put them on the wire rack. Leave it to cool completely. Before serving, you can pour the finished sugar icing over the cupcakes and sprinkle with pastry sprinkles. Enjoy your tea!
