Carrot muffins on kefir

The addition of some vegetables to baked goods, in particular carrots, has long ceased to be a curiosity. This vegetable is not felt at all in the dessert, while endowing it with interesting taste. It will not be difficult to prepare such cupcakes, because carrots are present in the kitchen of almost any housewife.

In a deep bowl, mix vegetable oil, kefir and sugar until smooth.

Add eggs and carrots to the resulting mixture, which we pre-rub on a fine grater. If the grated carrot mass releases too much juice, squeeze it out with gauze napkins.

Mix dry ingredients in a separate container: flour, baking soda, salt, baking powder and nutmeg.

We knead the dough: gradually add dry products to the kefir-carrot mass, whisk well with a whisk. As a result, you should get a homogeneous mixture without lumps, and resemble the consistency of thick sour cream.

We pour the resulting dough into molds (both silicone and metal can be used) for 2/3 of their volume.

We put the muffins in an oven preheated to 180 degrees for about 20-25 minutes. Readiness is determined with a wooden skewer or toothpick.
