Grate the peeled carrots on a fine grater, you can also use a food processor or blender. Measure out the required amount of flour and sift through a sieve into a separate container along with baking powder and baking soda. Add the required amount of granulated sugar, salt, ground ginger and cinnamon. Mix thoroughly.
Cover metal molds with special paper capsules for muffins, fill with ready-made dough to 2/3 of their height. Then place it in an oven preheated to 180 degrees. Bake the flavored muffins for about 25-30 minutes. Check the readiness of homemade baked goods with a toothpick or wooden skewer. It must be completely dry.
