Carrot juice is one of the healthiest vegetable juices available. I prepare various juices at home every year. Today I want to share an unusual recipe for carrot juice prepared without a juicer. Carrot juice can be prepared using a meat grinder, food processor, or a blender.

First, measure out the required amount of carrots for the carrot juice. Choose carrots that are juicy and sweet. Rinse the prepared carrots thoroughly in cold water using a fruit and vegetable brush, and then peel them with a vegetable peeler.

Cut the peeled carrots into thin slices.

I used a blender. Put the prepared carrot slices into a blender glass, pour in a small amount of water and chop. If you have a low power blender, it is better to use another method, such as a meat grinder, food processor, or grater.

If there is not enough water, add a little more to chop the carrots until smooth. In the meantime, rinse the jars thoroughly with warm water and baking soda. Sterilize clean cans in a water bath, microwave or oven. Pour boiling water over the lids or boil in a separate saucepan.

Strain the resulting mass through a fine sieve into a saucepan, add the remaining water. Add the required amount of granulated sugar and mix well. Adjust the amount of sugar depending on your own taste preferences and the natural sweetness of the carrots. Put the saucepan over medium heat. Bring to a boil, reduce heat, and simmer the juice for about 5-7 minutes.

Gently pour hot carrot juice into sterile jars and screw it well with sterile lids, then turn it upside down and wrap it in a warm blanket. Leave in this position for about 8-10 hours until it cools completely. After the cans of carrot juice have cooled completely, move them to a cool, dark place for long-term storage.
