Carrot juice with pulp for the winter

How nice it is to open a can of bright, tasty and healthy carrot juice in winter. I have not bought any juices in the store for a long time, but I always try to prepare a healthy and vitamin drink on my own. I suggest you use my recipe too.

Rinse the carrots thoroughly in cold running water, use a vegetable and fruit brush if necessary, and then peel them with a vegetable peeler or sharp knife. Cut the peeled carrots into small circles. Put the chopped carrots in a saucepan with a thick bottom, pour half the norm of cold water.

Place over medium heat and bring to a boil, then reduce heat and cook carrots for about 30-35 minutes until tender. In the meantime, prepare the jars. Wash them thoroughly in warm water and baking soda, and then sterilize in the microwave, oven, or bain-marie.

Gently remove the pot of carrots from the heat, cool slightly and use a hand blender to chop the carrots until smooth.

If you don't have a hand blender, you can use a food processor or meat grinder, or you can simply grind the mass through a sieve lined with several layers of gauze. The goal is to get a homogeneous smooth mass.

Add the required amount of granulated sugar, citric acid and the remaining amount of drinking water to the resulting mass. Adjust the amount of granulated sugar depending on your own taste preferences and the natural sweetness of the carrots. Put the saucepan with the contents over medium heat and bring to a boil.

Pour hot juice into sterile jars and tighten with sterile lids, after boiling them. Turn hot jars upside down and wrap them in a warm blanket, then leave for about 12 hours until they cool completely. Then move the jars to a cool storage area. Serve carrot juice with pulp as a healthy dessert.
