Birch sap drink for the winter

If just preparing birch sap for the winter seems too boring for you, try making a vitamin drink with lemon and ginger from it. It is not much more complicated to prepare than just birch sap with sugar, but the taste is much more interesting.

Wash the ginger root thoroughly and dry it. Cut with a knife into thin transverse slices.

Wash the lemon and cut into thin circles. If you come across bones, throw them away.

Strain the birch sap through a cheesecloth folded in two or three layers, then place it in a saucepan and put it on the stove. Add granulated sugar and lemon with ginger. Bring everything together to a boil, stirring occasionally. Do not boil.

Wash cans, sterilize in any suitable way. After that, dry the container well. We do the same with the lids.

Pour boiling birch sap into jars along with the contents - lemon circles and ginger slices. We immediately tighten the jars with sterilized dry lids. Turn the container upside down and leave the juice to cool in this position. We put the cooled jars for storage in a cool, dark place.
