Bulgarian cucumbers with mustard

Cucumbers in Bulgarian style with mustard is a completely simple preparation, but at the same time it differs from the usual preservation by its unusual taste. If you want to immerse yourself in the culinary culture of Bulgaria at least a little, then cucumbers prepared in this way are especially for you.

Rinse the fresh cucumbers thoroughly and fill them with cold water. Let the cucumbers brew for about three hours so that they crunch better. It is best to give preference to small cucumbers.

Let's take care of the marinade. To do this, pour 800 ml into a large saucepan. water we dilute in it three tablespoons of sugar and one and a half tablespoons of salt. Then the marinade must be boiled.

Prepare the spices. Peel the garlic and carrots, cut them into rings.

Put larger cucumbers in a clean pasteurized jar, then spices, chopped carrots, garlic cloves, parsley, bay leaf, onions, then send smaller cucumbers to the jar.

Immediately after the marinade has boiled, it must be poured into jars. Then add vinegar to the jars.

We take a large saucepan or an enamel basin, line the bottom with a waffle towel folded in half, fill it with water and boil it. We send jars of marinade into boiling water, which should remain there until the cucumbers turn olive green. This takes approximately five to seven minutes.
