There are many ways to marinate cucumbers in Polish: with garlic, and mustard, and with herbs, and with carrots and onions, but they all have one thing in common - a large amount of sugar and vinegar in the marinade compared to a conventional marinade. The addition of onions and carrots gives Polish cucumbers a special taste, and even these vegetables are soaked in marinade and are just as tasty. For harvesting, small cucumbers are chosen to be beautifully placed in a jar. Cucumbers are often cut into pieces, but in this case sterilization is required. According to this recipe, pickle cucumbers in Polish by pouring 3 times and without sterilization.

Cucumbers, so that they are crispy, are soaked in very cold water for a couple of hours in advance. Then they are thoroughly rinsed under running water and the tips are removed from both sides. Carrots are peeled, washed and chopped on a Korean grater or cut into thin circles. The bulbs are peeled and chopped into thin rings. Jars are immediately prepared, washed and sterilized in any way. The lids are boiled. Measure the amount of spices specified in the recipe.

Spices are first put in sterile jars: coriander, mustard seeds, allspice peas and laurel leaves. Onion rings (1 onion per liter jar) and carrot shavings are placed on top of the spices in each jar. Then cucumbers are compactly and beautifully placed in the jars, tamping them tightly. If the fruits are large, we cut them to fit more into the jar.

Then clean water is boiled, all the jars are poured with boiling water, covered with boiled lids and left for 20 minutes.

After this time, water from the cans is poured through a special lid and re-poured with a second portion of boiling water for 20 minutes.

Then the second time the water from the cans is poured into a saucepan and the marinade is boiled on it. Add another glass of water to the pan, since some of it has been absorbed by the cucumbers, and the marinade will not be enough. Pour salt and sugar into the water according to the calculation indicated in the recipe, stir them until completely dissolved, boil the marinade for 2 minutes and at the end pour table vinegar.

The fire is immediately turned off and cucumbers in jars are poured with boiling marinade for the third time, filling them to the top of the neck. Banks are immediately hermetically sealed, put on lids and covered with a warm blanket for a day.
