Crispy cucumbers with tomatoes for the winter

Pickled assorted vegetables keep very well. For rolling cucumbers and tomatoes, it is better to choose small cucumbers, so they remain crispy, and not overripe tomatoes, so that they do not fall apart and retain their shape.

Wash cucumbers and tomatoes. Pour cucumbers with water for 1-2 hours. Cut off the ends on both sides of the cucumbers.

Pre-sterilize jars and lids. Place the garlic and herbs at the bottom of the jars. Then place the cucumbers and tomatoes in the jars.

Boil water and pour the jars of vegetables to the very top. After 15-20 minutes, drain the water back into the pan, bring it to a boil a second time and pour the vegetables over again, leave for 15 minutes.

Based on a three-liter jar, dilute 3 tablespoons of salt and sugar in the required amount of water, add 6-7 allspice peas, 8-10 black peppercorns and 2-3 clove inflorescences. Bring the marinade to a boil, simmer for 1-2 minutes, then add 7-8 tablespoons of vinegar, stir. Pour the jars with hot marinade and roll them up with lids. Leave the seams to cool at room temperature, then transfer them to a cool place.
