Cucumbers in tomato without sterilization for the winter

I want to share a wonderful winter recipe for cucumbers in a tomato. The appetizer turns out to be quite juicy, with a tasty and aromatic marinade. Such cucumbers will certainly decorate your festive table and bring incomparable pleasure to you and your guests.

Ingredients

Cooking process

step 1 out of 7
Wash the tomatoes thoroughly. Make a cruciform incision and place them for a couple of minutes in pre-prepared boiling water, and then put them in cold water. Gently peel and stalk, then blend until smooth using a hand blender, meat grinder, or food processor. Pour the resulting mass into a saucepan.
step 2 out of 7
Add black peppercorns, cloves and allspice peas. Put on medium heat, bring to a boil, then boil the tomato mass for about 10 minutes.
step 3 out of 7
Then carefully remove from heat and rub through a fine sieve, you can cover with gauze folded in several layers.
step 4 out of 7
Prepare the marinade. Pour the resulting tomato sauce into a saucepan with a thick bottom, add granulated sugar, vinegar and coarse salt. Put the saucepan with the contents on moderate heat. Bring to a boil.
step 5 out of 7
Wash the cucumbers thoroughly in cool water, pat dry on a kitchen towel, cut the tails on both sides, then cut into thin slices and place in the marinade. Peel the garlic, rinse, and then pass through a press, grate on a fine grater or chop with a blender. Add to saucepan. Reduce heat and simmer for 10 minutes.
step 6 out of 7
Wash the jars thoroughly and sterilize the way convenient for you - in the microwave, in the oven or in a water bath. Boil the lids in a saucepan or pour over boiling water. Fill sterile jars with a fragrant cucumber-in-tomato snack.
step 7 out of 7
Tighten hot jars with cucumbers in tomato sauce well with sterile lids and turn them upside down, wrap them in a warm blanket or a terry towel and leave in this state until they cool completely for about a day. Store the cooled jars in a cool, dark place.

Bon Appetit!
