Cucumbers in tomato juice

Cucumbers rolled in tomato juice for the winter are not only very tasty, but also convenient. This is a ready-made vegetable side dish for any meat dish. All that is required is to open the can and arrange the ready-made savory cucumbers on plates.

We wash and dry the cucumbers thoroughly. We cut them into small circles, approximately 7-10 millimeters thick.

Combine the tomato juice with the indicated amount of water in a wide bowl or saucepan. Add granulated sugar, salt and vegetable oil. Mix and place on the stove. Bring the mixture to a boil.

At the moment of boiling the tomato mixture, add the chopped cucumbers to the container, mix and cook for twenty minutes at a low intensity boil. Stir occasionally so that the cucumbers cook evenly. At the end of cooking, put the garlic and pour in the vinegar.

Put hot cucumbers in tomato juice on sterilized dry jars, roll up with sterilized lids and let cool completely. We put it in a cool dark place for storage.
