It is with great pleasure that I want to share a recipe for delicious cucumbers in tomato juice. The recipe is very simple and will surely appeal to everyone who does not like to “waste” their invaluable time on preparing winter preparations. The appetizer turns out to be insanely tasty - it is simply impossible to stop.

Prepare all the ingredients you need. Wash cucumbers, lemon and tomatoes thoroughly in cool running water, pat dry on a dry kitchen towel or use paper towels. Peel the garlic, rinse under cold water.

Make a cross-shaped incision on the tomatoes, place them in prepared boiling water for just a couple of minutes, and then transfer them to cold water. Peel off the skin carefully and remove the stalk. Cut the prepared tomatoes into several pieces and grind until smooth using a hand blender, food processor or meat grinder.

Wash the jars thoroughly and sterilize in the microwave or oven. Boil the lids or pour over with boiling water. Cut the lemon in half and squeeze out the juice. Prepare the marinade. Pour the resulting tomato juice into a saucepan with a thick bottom, add granulated sugar, garlic, black pepper and salt.

Put the saucepan on the fire. Pour in vegetable oil. Boil for 5-7 minutes, then pour in the lemon juice. Pass the garlic through a press and send to the marinade. Peel the cucumbers with a vegetable peeler, cut into cubes and send to the pan. Stir. Bring to a boil and immediately remove from heat.

Gently fill sterile jars with hot snacks, and screw with sterile lids. Turn hot jars of cucumbers in tomato juice upside down, wrap with a terry towel, and leave in this form until completely cooled for a day. Then turn over and store the jars in a cool, dark place.
