Initially, okroshka did not contain sausage and potatoes. It was the dish that was made with the first vegetables and the first greens to appear in the spring. We also offer you to prepare this refreshing soup with the addition of kvass.

Wash greens with cold water, shake off any excess moisture. Wash cucumbers and radishes. Hard boil the eggs for 10 minutes. after boiling with a pinch of baking soda. Chill in ice water.

Cut vegetables into thin strips. If desired, the radish can be grated on a coarse grater. If a cucumber is caught with a tough skin, it is better to remove it.
