Okroshka classic

Okroshka is a traditional cold soup that perfectly quenches thirst and hunger. Okroshka is cooked on water, on kvass, on kefir, on mineral water, on whey, on tan. Everyone chooses their favorite option.

Prepare the necessary ingredients for the classic okroshka on kvass in advance. Boil the potatoes in their skins for 20 minutes after boiling. Boil chicken eggs hard-boiled for 10 minutes. Cool and clean cooked food. Wash the greens thoroughly under running water and let them dry. Wash radishes and cucumbers well in cool water.

Cut cucumbers, peeled potatoes and radishes into medium-sized cubes. Cut the ham or boiled lean meat in the same way. Ingredients can be cut into strips, it all depends on your preference.

Cut the shelled chicken eggs in half, remove the chicken yolks and set aside. Cut the proteins in the same way as all the other ingredients.

Place the chicken yolks in a small bowl, add the Dijon mustard and use a fork or spoon until smooth. Add granulated sugar to taste, salt, black pepper, mix, pour in a small amount of kvass and mix the dressing well.

Chop green onions, dill and parsley finely. Transfer to a deep bowl, add salt and rub lightly with a tablespoon. The texture of the chopped greens should not turn into mush.
