Okroshka with mayonnaise

Summer cold soup, or okroshka, is prepared on the basis of kefir, kvass or mayonnaise. For such a soup, use lean meat or sausage without lard; to make the dish sour, you can add table vinegar or lemon juice.

Boil the potatoes in their skins, cool, peel, cut into cubes.

Hard-boiled eggs, pour cold water, when cool, remove the shell, chop finely.

Cut the sausage or pre-cooked meat into cubes.

Wash the cucumbers and cut into small cubes.

Add mayonnaise to the pan, stir to distribute mayonnaise evenly over all chopped foods.

Add chilled boiled water to okroshka, mix well until the mayonnaise is completely dissolved. The amount of water determines the density of okroshka, so determine the required amount of water at your discretion.

Add a couple of tablespoons of lemon juice to okroshka. Usually, there is enough salt from mayonnaise and sausage, but you can add salt to the dish to your taste. Serve chilled okroshka.
