Okroshka on mineral water

A wonderful refreshing soup, indispensable in hot summer seasons. Traditionally, okroshka is cooked with kefir, but the addition of mineral water will make the dish less nutritious and tastier. If you have not tried such a recipe yet, be sure to please your household with it!

Peel the potatoes and boil until tender. Then cut into small pieces.

We also need to boil the eggs. Boil them steep: after boiling, cook for 10 minutes. and cool it under running water. Finely chopping them with a knife.

We wash the cucumbers and cut into small pieces. Rub one cucumber separately with a coarse grater.

Rub the radish in the same way.

Cut the salami into small cubes.

Peel the onion, cut into small pieces and salt.

Now we transfer all the ingredients to the pan. Mix them and fill with kefir. Add chilled mineral water to okroshka. We check if we have enough salt, add a little vinegar if desired. And put it in the refrigerator for a couple of hours.
Advice: this dish is best served with sour cream. Just add a spoonful of sour cream to each serving. Okroshka from this will only taste better!
