Okroshka on sour cream with sausage

A very simple version of okroshka: with pieces of sausage, vegetables, seasoned with sour cream. You can dilute such okroshka simply with water or whey. It is recommended to use young cucumbers - they have a sweeter taste and a softer texture. Onion feathers should also be chosen small and at an early stage of ripeness, this affects the final taste of okroshka.

We put potatoes and eggs to boil. If the tubers are medium in size, the boil time will be about half an hour.

Let the potatoes cool and peel them.

Boil eggs for 10-12 minutes, cool and peel them.

Cut the potatoes and eggs into small cubes.

We wash the cucumbers, dry them and cut them into small pieces, in proportion to the potatoes. We wash the green onion feathers, dry them and cut them across into thin rings.
