Okroshka with whey and sour cream

Serum okroshka can be prepared for the dinner table when the first vegetables appear on the beds. It is vegetables and fresh herbs that make this cold soup a source of vitamins. You are encouraged to add some sausage to okroshka to make the dish more satisfying. You can buy okroshka serum in the market, or you can make it at home from frozen kefir.

To prepare the whey, transfer the package of frozen cheese to a colander lined with 4-layer cheesecloth and let it sit overnight.

During this time, the whey will drain into the container. Leave the resulting cottage cheese for another dish, and chill the resulting milk whey in the refrigerator.

Boil potatoes in their uniforms, boil hard-boiled eggs and chill everything. Peel the eggs and cut into small cubes. Transfer them to a bowl for making okroshka.

Wash and peel the cucumbers if the cucumbers are bitter. Then chop them into small cubes as well.
