Zucchini fritters for children

Zucchini is a healthy product in the children's menu. They are hypoallergenic and contain fiber and vitamins. We offer to prepare zucchini pancakes for children, which will also appeal to adults. There are no eggs in the dough, pancakes consist only of courgettes, flour and a pinch of salt. If there are restrictions on gluten, wheat flour can be replaced with rice or corn flour, adjusting its amount visually according to the consistency of the dough.

We wash and dry the zucchini thoroughly.

If mature zucchini is used, then the peel must be cut off and the seeds removed. If the zucchini is young, then you can simply cut off the ends, and leave the peel and seeds, as they are still tender and juicy.

Three prepared zucchini on a medium or coarse grater. Put the grated mass in a bowl, add salt, mix and let stand for ten to fifteen minutes. During this time, a certain amount of juice will stand out, which must be drained so that the dough is not too liquid.

Sift the flour over the zucchini mass. Mix the dough thoroughly with a spoon until smooth. You can add less or more flour as needed. The consistency of the dough should be of medium thickness.

Pour a small amount of vegetable oil into a frying pan and heat it until hot. Spoon the squash dough into a skillet and fry the pancakes for four to five minutes at medium-low temperature.

Using a thin spatula, turn the pancakes over to the other side and continue to fry for another three to four minutes.

We remove the finished pancakes from the pan and put them on a paper towel to get rid of excess oil and reduce the final fat content of the dish. After that, we put them on a serving plate and serve. Recommended to be consumed warm.
