Zucchini cakes with garlic

In zucchini season, it's time to cook pancakes. This recipe is simple and, in addition to zucchini, includes only garlic, herbs, eggs and flour. Despite the modest range of products, the pancakes turn out to be rich in taste - the juicy sweetness of the zucchini, along with the aroma of garlic, does their job.

To prepare the pancakes, you need to peel the zucchini. If these are young fruits, it is enough to simply cut off the tip and trace of the stem. If the zucchini is ripe, peel off the skin with a knife and remove the seeds.

Rub the prepared zucchini on a fine grater.

Let the grated zucchini stand for five minutes - a certain amount of juice will stand out, which must be drained so that the pancake dough does not turn out too thin. Add the egg, salt and black pepper to the zucchini. Peel the garlic and pass through a press, add to the zucchini.

Add half the amount of flour to the zucchini, mix everything thoroughly with a whisk or spoon.

Wash the parsley sprigs, dry them, chop finely with a knife and add to the squash dough.

Add the remaining flour to the dough, mix.

The dough turns out to be quite thick. During the frying process, while the dough is standing, a certain amount of juice will be released. It is recommended that you simply stir the mass periodically to maintain the same desired consistency.

Heat a small amount of vegetable oil in a frying pan until hot. Put small pancakes on a frying pan with a spoon and fry with the lid open for four to five minutes on one side. Then turn over and continue to fry for three to four minutes until golden brown. Put the finished pancakes on a paper towel to get rid of excess oil and then place them on a serving plate. Serve hot with sour cream.
