Homemade pancakes are a wonderful breakfast option that will energize your day. The smell of fresh ruddy "crumpets" will instantly make you wake up, and at the same time awaken your appetite. This simple, inexpensive dish is loved all over the world, and for good reason - it is prepared quickly, saturates for a long time, and how delicious it is! There are many recipes for pancakes, this one will be cooked in milk. At the end of the recipe, there is a valuable hint on what to do with the leftover pancakes so that they not only do not lose their attractiveness, but also become even tastier.

Break eggs into a large bowl and add the specified amount of salt and granulated sugar to them.

Beat the eggs with a whisk or mixer until a homogeneous foamy mass is obtained. Without stopping to work with a whisk, pour milk into the egg-sugar mixture in a thin stream.

Sift the flour and add it to the prepared liquid mixture. Knead the dough in a circular motion, breaking all the flour lumps and achieving complete homogeneity. Depending on the characteristics of a particular flour, you may need a little more or less of it. We focus on the consistency - it should resemble thick sour cream, in no case should it be tight, too thick.

In a separate small bowl, pour baking soda with vinegar, stir and let stand for a minute.

Add the soda quenched in vinegar to the dough last and mix gently.

Pour odorless vegetable oil into the pan and heat it until hot. Take a small amount of dough with a spoon and dip it into boiling oil. We keep the temperature of the stove at a medium level so that the pancakes have time to fry, but do not burn. Fry on each side, without covering, for about two to three minutes, until a golden brown crust appears. Pancakes grow well when fried.

Put the finished pancakes out of the pan on a paper towel to get rid of the remaining vegetable oil after frying. Put the dried pancakes on a dish and serve hot, for example, with sour cream and jam.

If after the meal there is a certain amount of pancakes, they can be smeared with sour cream mixed with sugar. We put them in this form on top of each other in a bowl, cover with a lid or tighten with a food whip, and then put them in the refrigerator for several hours. The pancakes will be soaked in sour cream and become much juicier and sweeter - what is not a dessert for tea? They can be consumed both cold and warm, warming up before serving in the microwave.
