For a long time I could not find a recipe for pancakes with yeast like in kindergarten. No matter how many recipes I tried, I did not get such a texture of pancakes as from childhood. And recently, quite by accident, I found this recipe in my grandmother's cookbook. Joy knew no bounds. The pancakes turned out to be exactly those that were given in kindergarten.

First of all, prepare all the necessary ingredients for the yeast pancakes.

Pour the required amount of warm drinking water into a deep container. Add the required amount of yeast, granulated sugar, salt and vegetable oil. Mix thoroughly until completely dissolved.

Gradually, in several steps, introduce wheat flour previously sifted through a fine sieve. Stir the dough thoroughly until smooth.

Cover the container with a clean towel, lid or cling film and place in a warm place for about 30 minutes. During this time, the dough will increase in volume several times.

Heat a heavy-bottomed skillet well over moderate heat. Then pour in the required amount of vegetable oil. Using a tablespoon, carefully lay out the dough, without stirring, at a distance from each other, evenly distributing it over the entire surface of the pan. When the edges are browned and the dough has set well, turn the pancakes over to the other side with a wooden spatula and fry until golden brown.

Put the finished pancakes on a dish, previously covered with paper towels or napkins, so that the excess oil is absorbed. Serve cooked pancakes with yeast on the table for tea, add jam, jam, condensed milk or sour cream if desired.
