Kefir pancakes without yeast

When it comes to pancakes, associations with home comfort, warm aroma and magical taste of porous air crumpets, hotly served with sour cream and jam, immediately pop up. According to this recipe, we propose to cook pancakes with kefir, which do not require time for proofing, but turn out to be lush and airy, like yeast.

We prepare products for making pancakes. We take out the kefir from the refrigerator so that it has time to take room temperature.

Break the egg into a bowl, add salt and sugar, beat with a fork or whisk until the ingredients are completely mixed.

Pour kefir and the indicated amount of water into a saucepan and put on the stove. We heat to a warm state. Do not boil!

Combine a beaten egg with sugar and salt with heated kefir.

Sift the flour directly into a container with a kefir-egg mixture.

We mix everything with a whisk so that there are no lumps. More or less amount of flour may be required - depending on its technical characteristics. Therefore, it is recommended to add flour in portions so that you can stop in time or add more if necessary.

Pour the baking soda and mix thoroughly again. The consistency of the dough is quite thick.

Pour vegetable oil into a frying pan and put on the stove. Heat the oil to a hot state and spread the dough in the form of small pancakes with a spoon.

Fry on medium temperature for about a minute or two, then turn over with a spatula to the other side and close the pan with a lid. Fry for about two minutes.

Put the finished pancakes on a paper towel so that it absorbs excess oil. After that, place the pancakes on a serving plate and serve immediately while they are hot. Can be served with sour cream, jam, condensed milk.
