Kefir pancakes without flour

You probably knew that pancakes can be baked without flour. On semolina, baking turns out to be no worse, the same soft inside and with crispy edges on the outside.

Whisk eggs, sugar and salt in a bowl until frothy.

Pour the kefir into the egg mass, mix gently with a spatula.

Add semolina, stir so that there are no lumps and leave the dough for 1.5-2 hours so that the semolina swells.

Add soda, citric acid and one spoonful of kefir to the thickened dough so that the soda reacts with the acid faster. Stir the dough again.

Pour sunflower oil into a preheated pan, spoon the dough into the pan with a tablespoon, forming rounded pancakes, cover the pan with a lid and fry until the edges of the dough are browned. Then turn the pancakes over to the other side and cook, covered, until tender.

Put the finished pancakes on paper napkins to get rid of excess oil. Pancakes can be served with sour cream or jam for breakfast.
