Kefir pancakes quickly

Pancakes for breakfast or dinner are always a great solution. They cook quickly, taste good with a variety of toppings and sauces, and fill up well. Kefir pancakes are good because they turn out fluffy and soft, like yeast, but you do not need to wait until the dough rises. After mixing all the ingredients, it is recommended only to let the dough stand for ten minutes so that the soda is extinguished in the kefir and the air bubbles can saturate the future pancakes.

We prepare the necessary products for pancakes. We take eggs, kefir and milk out of the refrigerator so that they reach room temperature.

Pour kefir, milk into a bowl in which the dough will be mixed and break the egg. Add sugar and salt. With a whisk, mix all the components until smooth. No need to whisk at high speeds, just mix all the ingredients.

Sift the flour directly into a bowl and immediately add the baking soda.

Knead everything again with a whisk until all the lumps disperse and the consistency of the dough is completely homogeneous and smooth. The dough is medium thick.

Let the resulting dough stand for ten minutes. During this time, a reaction between soda and kefir acid will start, the dough will begin to enrich with air bubbles.

Pour a small amount of vegetable oil into the pan and heat it until hot. Spoon out small pancakes and fry them for two to three minutes on one side with the lid closed. Do not place the pancakes too close together, as they will swell and stick together when frying.

Then we turn the pancakes over to the other side and continue to fry for another two minutes without closing the lids.

Put the finished pancakes on a paper towel to get rid of excess fat. Serve the dried pancakes with sour cream, syrup, jam, fresh berries if desired.
