Kefir pancakes with fast-acting yeast

Fluffy pancakes with yeast are perfect for breakfast or a delicious snack for an afternoon snack. They can be supplemented with jam, whipped cream and fruit, condensed milk, chocolate, or just sour cream.

Remove the pancake ingredients from the refrigerator so that they are at room temperature when cooking.

Pour sugar and dry yeast into kefir. Then add the chicken eggs and a pinch of salt. Beat the mixture with a whisk.

Sift the flour and add to the dough, mix well. The dough should be thick, smooth and lump-free. Cover the container with the dough with cling film and place in a warm place for 15 minutes, during which time the dough will increase in volume and become airy.

Preheat the pan, pour in a small amount of sunflower oil, spoon the dough and pour into the pan, forming round pancakes. Fry the pancakes on both sides over medium heat.
