Kefir pancakes with cottage cheese and apple

The remains of cottage cheese and kefir in the refrigerator can be very successfully used if you cook pancakes. Add a grated apple to the dough - it will be juicy and aromatic. So that the pancakes are not heavy and too wet, be sure to introduce soda - it will be extinguished with kefir and an apple and will give the missing porosity. Such pancakes are especially tasty when hot.

Pour kefir into a bowl. It is ideal to use kefir, the shelf life of which is coming to an end - its acid extinguishes soda well. We break eggs to it, add a pinch of salt, soda and the specified amount of granulated sugar. With a mixer or a whisk, mix everything well with a whisk until smooth.

Put the cottage cheese into the resulting liquid mixture. The product can be of absolutely any fat content. We mix it into the total mass using a mixer or blender.

We wash the apple, dry it and cut it into four parts. Cut off the peel and remove the seed capsule. Three fruit pulp on a coarse grater and pour the resulting shavings into the liquid curd mixture. We mix. Sift flour over the resulting mass, mix thoroughly and break all the lumps. You may need a little more or less flour: the consistency of the dough should be quite thick. If you put the mass into a spoon, it should fall gently from it, but not pour out in a trickle.

Pour such an amount of odorless vegetable oil into the pan so that it covers the bottom with a layer of one centimeter. We warm it up well on the stove. We collect the cooked dough with apples with a spoon and put it in the pan in the form of round pancakes, leaving a small distance between them. Maintain the temperature of the slab medium-low. Fry for one and a half to two minutes, until a crust appears from below.

Turn the pancakes over with a spatula to the other side and continue to fry until they are browned from below.

We remove the finished crumpets from the pan with a spatula and dry them on a paper towel - it will remove excess oil after frying. Place the dried pancakes on a serving plate and serve hot, for example, with sour cream. Fry the rest of the dough in the same way, adding additional vegetable oil to the pan if necessary.
