Apples and cinnamon are made for each other. In any baked goods, this combination evokes appetite and pleases with an amazing aroma. Let's prepare juicy pancakes with apple pieces - based on kefir dough, with the addition of this sweet spice. The pancakes are fried quickly, the fruit pieces do not have time to soften much during this time, but at the same time they become more tender. The final texture of the pancakes is a porous soft dough, juicy apple splashes, and a crispy crust. And, of course, the mouthwatering aroma of cinnamon.

Break eggs into a bowl, add a pinch of salt and granulated sugar. We actively mix everything together with a whisk so that the sugar crystals mostly dissolve, and foam appears on the surface.

Next, pour kefir into the egg mass and mix thoroughly. In a separate container, extinguish the soda with apple cider vinegar and put the resulting gruel in a bowl to the kefir-egg mass, mix. Then we sift the flour and add it to the liquid mixture, mix thoroughly again until smooth. The consistency of the dough should be such that the mass flows down from the whisk in a soft stream, and spreads slightly below.

We wash the apples, dry them and cut them into four parts, remove the seed capsule. Cut the fruit pulp into small cubes. Pour them into the dough, sprinkle with cinnamon, mix. The pancake dough is ready.

Pour a small amount of odorless vegetable oil into a frying pan, distribute it along the bottom and heat it well on the stove. We collect the cooked dough with apples using a tablespoon and put in the pan in the form of small pancakes, leaving a small distance between them. We keep the temperature of the stove medium-low, do not cover the pan with a lid. Fry the pancakes on one side until the crust is browned underneath. Then turn the pancakes over with a spatula to the other side and continue to fry until they are browned from below.
