Kefir pancakes with apples and pumpkin

Very interesting in texture, pancakes, which mostly consist of pumpkin and apples. The dough on kefir and eggs acts as a base in which the fruit pulp is kept and does not allow it to disintegrate. Apples are suitable for any variety. The situation is the same with pumpkin - both sweet and not very sweet will do, since you can additionally add granulated sugar to the dough and correct the missing sweetness.

My pumpkin, dry it and cut it into pieces. We remove the seeds, cut off the peel and three pulp on a fine grater. We wash the apple, dry it and cut it into four parts, remove the seed capsule and also three on a fine grater. Place the grated pumpkin and apples in a bowl.

Pour kefir into a bowl to the fruit mass, break the eggs, add a pinch of salt, soda and the desired amount of granulated sugar. Mix everything well with a spoon until relatively homogeneous. Pour in flour and mix again so that no flour lumps remain.

Pour a small amount of odorless vegetable oil into a frying pan. We warm it up well on the stove. We collect the prepared dough with a spoon and put it in the pan in the form of small pancakes, leaving a small distance between them. Maintain the temperature of the slab medium-low.

Fry for one and a half to two minutes, until a golden crust appears from below. Then turn the pancakes over with a spatula to the other side and continue to fry until they are browned from below. Fry the rest of the dough in the same way, if necessary, add additional vegetable oil to the pan

Remove the finished pancakes from the pan with a spatula and dry on a paper towel to remove excess oil after frying. Place the dried pancakes on a serving plate and serve hot, for example, with sour cream.
