The main rule of lush pancakes is to add soda at the end of the dough kneading and let the dough stand for a while so that the reaction with kefir takes place. Last of all, add soda, it will be extinguished due to the acid of kefir, if kefir is not acidic enough, you can add a few drops of lemon juice. Mix all ingredients well with a whisk. The consistency of the dough turns out to be a little thick, it should not pour from the whisk, but should slowly stretch and drain. Leave the dough to stand for 5-7 minutes for the reaction of soda and kefir to occur.
Preheat the pan, add vegetable oil and spread the dough 1 tablespoon at a time, you should not add more dough, as it will not be fried inside. Do not press the dough from above so that the pancakes rise well. After a few minutes, when the pancakes are fried on one side, turn the pancakes to the other side and fry for a few more minutes.
