Kefir pancakes with green onions

The addition of fresh green onion feathers to the dough dramatically changes the usual taste of pancakes. They become piquant, especially juicy and aromatic. If desired, you can also add bacon cut into small cubes to such a dough - this will add even more flavor to the pancakes.

Break the eggs into a wide bowl, add salt and beat by hand with a whisk until the protein and yolk are completely mixed. There is no need to achieve a lush foam.

We heat kefir in the microwave or on the stove until warm and pour in a bowl of eggs. Stir with a whisk until smooth.

Thoroughly wash the green onion feathers and dry them well so that excess moisture does not get into the dough. We lay the onion feathers in parallel close to each other and cut them across into small rings.

Pour the chopped onion into a bowl to the kefir-egg mixture, mix. Sift the flour, add it along with the baking soda to the liquid ingredients and stir well so that there are no lumps left. The consistency of the finished dough turns out to be quite liquid. Let the dough stand for 10-15 minutes so that the soda reacts with the acid of kefir.

Pour vegetable oil into a frying pan and heat it on the stove until hot.

Scoop the dough with a spoon and put it in hot oil in the form of small pancakes. Fry on medium temperature for three to four minutes and turn over to the other side. We continue to fry for another three to four minutes until golden brown.

Put the finished pancakes on a paper towel to get rid of excess oil, dry the pancakes a little. We put them in a pile on a serving plate and serve with sour cream.
