If you haven't made pancakes with fresh herbs yet, we highly recommend giving it a try. Delicate airy dough on kefir is ideally combined with aromatic dill and spicy onions. This "green" combination is one of the most successful. You can also use parsley, basil, green garlic feathers - we focus on the presence of herbs in the kitchen and, of course, on our own preferences. Pancakes with herbs are delicious when hot - this is how herbs reveal their aromas to the maximum. Sour cream is ideal as an accompaniment.

Before preparing the pancakes, carefully wash the greens from dirt, then dry them well with a towel - excess moisture in the dough is not needed. If the dill contains tough stems, it is best to discard them. Thinly cut the onion feathers into transverse pieces, finely chop the dill with a knife.

Pour kefir into a bowl and break the egg. Add salt and granulated sugar. Shake the components with a whisk or fork until completely homogeneous.

On top of the kefir mixture, sift the flour together with the baking powder and knead the dough in a circular motion. The consistency of the finished dough is not too thick, flowing. Air bubbles will appear on the surface - this is a baking powder.

Pour the chopped green onion feathers into the prepared mass, mix.

Then add the chopped dill, mix again.

Heat a small amount of vegetable oil in a frying pan until hot. Take the dough with a spoon and put it in the form of pancakes in boiling oil. Fry without a lid for two to three minutes on each side, maintaining the average temperature of the stove. Fritters blush well, slightly increase in volume.

Transfer the finished browned pancakes from the pan to a paper towel so that it quickly absorbs the excess vegetable oil from the crust. Put the dried pancakes on a dish and immediately serve hot.
