Kefir pancakes in the oven

Classic pancakes in the oven, cooked on kefir dough, will more resemble rich pastries, and not those fluffy pancakes that we are used to frying in a large amount of oil. However, this method of baking pancakes has a big plus - they contain much fewer calories, and in order for the baking to be even more tender, you do not need to add a minimum amount of sugar to the dough, it will make it heavier. Soda is added to such a dough only before spreading the pancakes on a baking sheet.

Separate the whites from the yolks in the eggs. Beat them separately and mash the yolks with sugar.

Combine both masses very lightly and beat a little again.

Pour kefir heated to 50-60 degrees into a separate bowl, add vanillin to it.

Add kefir with vanilla to the beaten eggs, mix everything and in small portions, stirring gently with a whisk, add flour to the dough. The dough should not be very thick. At the very end, add slaked soda to it.

Heat the oven to 190-200 degrees, put the dough on the parchment with a spoon and bake the pancakes for 20 minutes until golden brown. During this time, they will become lush and beautiful, and inside they will have to be baked. Try one of the pancakes, if it is still damp then lengthen the baking time. Eat them hot with sour cream, jam or jam.
