Homemade pancakes always create a special atmosphere in the kitchen. And if you serve them for breakfast, then a good mood for the whole day is guaranteed. It is important that such food is not only attractive, but also quite satisfying. It is also convenient that everyone can choose a different accompaniment to pancakes: sour cream, jam, honey, condensed milk, etc. The impression of a multicomponent breakfast is created, and the hostess just needed to quickly mix the dough and fry non-capricious pancakes.

Break eggs into a bowl, add a pinch of salt and granulated sugar to them.

Beat eggs with additives with a whisk until smooth. The sugar crystals should dissolve, and air bubbles should appear on the surface of the egg mass.

Next, pour sour milk at room temperature into the egg mass, mix. Sift the flour and pour it in portions together with vanilla into the egg-milk mixture.

Mix everything together with a whisk. Depending on the flour, you may need a little more or less flour than the recipe says. That is why we add a little of it to keep track of the consistency. The dough should be smooth, homogeneous, of medium density. If you run a spoon over the surface of the dough, then a shallow groove will remain, the edges of which will immediately begin to close. Pour baking powder on top of the kneaded dough and mix everything well again so that the powder is well distributed throughout the mass.

Pour odorless vegetable oil into the pan in such an amount that it covers the bottom with a thin layer. We put the pan on the stove to warm up. The oil should get very hot - only then do we start spreading the pancakes. We collect the dough with a tablespoon and put it in small portions in the pan in the form of rounded pancakes. We leave the distance between the products. Maintain the temperature of the plate medium-low - the dough must have time to bake. Fry the pancakes on one side for one and a half to two minutes until golden brown.

Then turn the pancakes over to the other side with a thin spatula and continue to fry until they are browned from below. Remove the finished crumpets from the pan and dry them on a paper towel - it will absorb the excess oil. Fry the rest of the dough in the same way. Serve hot pancakes with sour cream, jam, honey.
