Pancakes are one of the favorite dishes that my grandmother cooked when I came to her on vacation in the village. Today I want to share with you a recipe for grandmother's pancakes with sour milk and yeast. The pancakes are incredibly airy, fluffy and tender.

First of all, prepare all the necessary ingredients for the pancakes with sour milk and yeast.

Remove the sour milk from the refrigerator in advance or heat it slightly over a fire or in a microwave oven. Add the required amount of yeast and mix thoroughly until it is completely dissolved. Take a deep bowl, break the chicken eggs, add the required amount of granulated sugar. Whisk with a mixer or whisk until fluffy.

Pour the resulting egg mass into the milk-yeast mixture. Mix well with a mixer or whisk until smooth.

Introduce wheat flour previously sifted through a fine sieve in several steps.

Stir the dough thoroughly until a homogeneous mass is formed and the lumps disappear completely. Cover the container with the dough with a lid or tighten with cling film and place in a warm place for about 30 minutes.

When the dough rises well, add the required amount of salt and baking soda. Stir the dough gently from bottom to top.

Heat a heavy-bottomed skillet well over moderate heat. Then brush with the required amount of vegetable oil. Using a tablespoon, gently spread the dough at some distance from each other, evenly distributing it over the entire surface of the pan.

As soon as the edges are browned and the dough has set well, use a silicone or wooden spatula to turn the pancakes over to the other side and fry until golden brown. Put the finished pancakes on a platter or large plate.
