Pancakes on sour cream

Sour cream pancakes are a great solution. Even if the product is not entirely fresh or even sour, we knead the dough without a doubt: in an acidic environment, soda is perfectly extinguished, and the finished pancakes turn out to be soft and porous, while the products do not have a sour taste. For breakfast, afternoon tea or dinner, with jam, sour cream or condensed milk - such pancakes will come in handy and will appeal to the whole family.

Put the sour cream in a bowl, break the eggs, mix. Pour in salt, granulated sugar, vanillin, soda and baking powder. Mix everything together with a whisk again.

Sift flour over the resulting liquid mass, mix thoroughly until a smooth, homogeneous dough is obtained.

The consistency should be soft, flowing. Air bubbles should appear on the surface - evidence of the reaction of soda with lactic acid.

Heat the non-stick frying pan well on the bottom of the stove - it should be hot. Pour in a small amount of vegetable oil, let it also warm up. We collect the dough with a tablespoon and put it in the pan in the form of round pancakes. When frying, they will increase slightly in size, so leave a small distance between them. Maintain the temperature of the slab medium-low. Fry for a couple of minutes, until a crust appears at the bottom, and on the surface the dough does not cease to be wet.

Turn the pancakes over to the other side and continue to fry until they are browned from below. We remove the finished products from the pan with a spatula and place them on a plate. Fry the rest of the dough in the same way, adding additional vegetable oil to the pan if necessary. Serve hot or warm pancakes with sour cream, jam, condensed milk.
