Fritters with minced meat on kefir

If ordinary pancakes are already on edge, you can cook them with some kind of filling. For example, with minced meat. This option will be an excellent hearty snack or dinner. Minced meat can be taken mixed - pork plus beef, you can also use chicken. The main thing is that the raw materials for minced meat are of high quality and not too fatty.

Ingredients

Cooking process

step 1 out of 12
To prepare the dough, break the egg into a bowl and shake it with salt using a fork or whisk. There is no need to beat until fluffy.
step 2 out of 12
We mix the egg with kefir. For such a test, already standing kefir, in which more acid has formed, is well suited. This will make the dough more fluffy.
step 3 out of 12
Pour baking soda into the egg-kefir mixture. Since kefir is a rather sour product, there is no additional need to extinguish soda. Let the mixture stand for five minutes.
step 4 out of 12
Pre-sift the flour to enrich it with oxygen. This is another trick for dough splendor.
step 5 out of 12
Pour the sifted flour into the egg-kefir mixture in portions, stirring well with a whisk each time. The consistency of the finished dough is of medium density, there should be no lumps left.
step 6 out of 12
Leave the dough to stand for thirty minutes.
step 7 out of 12
After that, stir the dough again: it is noticeable that the consistency has become a little thicker.
step 8 out of 12
Place the minced meat in a bowl. If, after defrosting the minced meat, a certain amount of meat juice is released, it must be drained.
step 9 out of 12
Peel the onions and cut them into small cubes. Add the onion to the minced meat, add salt and ground black pepper and knead everything together with a spoon or with your hands.
step 10 out of 12
Pour vegetable oil into a frying pan and put on the stove. We heat the oil until hot. Spoon small portions of the dough into the pan.
step 11 out of 12
From the minced meat, we form small balls with our hands and press them down with our palms to the state of a small cake. We put the learned cakes on pancakes in a frying pan. Take the dough with a spoon and put it on top of the minced meat, trying to completely close the filling. Cover the pan with a lid. It is recommended to perform the entire procedure quickly so that the pancakes have time to burn. And it is better to prepare meat cakes for the filling in advance, while the dough is infused, for example.
step 12 out of 12
Fry the stuffed pancakes for seven to ten minutes on each side, until a golden crust appears and the minced meat is completely cooked. It is important to consider that if minced meat is used, then it is better to fry the pancakes at a low temperature for a total of 15-20 minutes so that the filling has time to cook. If the mince is chicken, then the frying time can be reduced to 10-15 minutes. Remove the finished pancakes from the pan and immediately place them on a paper towel so that the excess oil is absorbed. Serve hot.

Bon Appetit!
