Adding grated cheese and chopped herbs to the pancake dough is a great solution. Such pancakes immediately become more interesting, aromatic and satisfying. Hot they can be served simply with sour cream for breakfast or dinner. Hot or cold, they perfectly complement homemade soup, replacing bread with them. It's also a good option for a hearty and tasty snack throughout the day. Such pancakes are prepared quickly, they are eaten even faster - it is worth immediately preparing a double portion.

Grate the hard cheese on a grater with large holes and place it in a bowl - in it we will knead the dough for pancakes. You can use absolutely any kind of cheese for pancakes.

Thoroughly wash the green onion feathers and dill branches, and then dry them on a towel so as not to add excess moisture to the dough. Chop the green onion into small transverse pieces, chop the dill finely with a knife. Add chopped herbs to a bowl to grated cheese.

Break the egg into a bowl, add salt and granulated sugar.

We heat kefir in a separate container until warm on the stove or in the microwave. Pour soda into it, mix and let stand for a couple of minutes so that the soda goes out. Then pour the kefir into a bowl with herbs and cheese. Stir all the ingredients well with a fork or whisk.

Pour flour into the liquid mixture in small portions and knead the dough in a circular motion. Depending on the characteristics of a particular flour, you may need a little more or a little less than indicated in the recipe. We focus on the consistency: the finished dough should not be too thin, but you shouldn't make it tight. By the degree of density, the mass should resemble fat sour cream: it is rather viscous and gently flows off the spoon.

In a wide frying pan, heat a small amount of odorless vegetable oil. Take the dough with a spoon and put it in boiling oil in the form of small pancakes at a certain distance from each other. Fry without a lid for two to three minutes on each side. The temperature of the plate is medium. The dough rises noticeably when frying, the crust is well reddened.

Remove the finished pancakes from the pan and transfer them to a plate with a paper towel so that it absorbs the excess oil after frying. Serve the dried pancakes with sour cream. They are especially tasty when hot, when the cheese is melted inside, and the greens reveal their aromas to the maximum and give a special juiciness.
