Fritters with cottage cheese on kefir

To make the pancakes lush, the dough is usually kneaded in kefir. Baking soda or baking powder will also help the pancakes feel airy. If you add cottage cheese to the dough, the products will taste like homemade cheesecakes, but with a more delicate texture. A kind of intermediate option between traditional pancakes and classic cottage cheese makers. To flavor the pancakes, we use orange zest - it goes very well with fermented milk pastries.

Break eggs into a bowl and add granulated sugar and a pinch of salt to them. Beat the ingredients with a whisk or fork into a homogeneous foamy mass.

We put the cottage cheese in the egg-sugar mixture and grind it, trying to break all the lumps and achieve relative uniformity. Then pour in kefir and mix thoroughly.

Pour flour, soda and grated orange zest on top of the resulting liquid mixture.

Knead the dough in a circular motion using a spoon or spatula. The consistency of the mass should be thick enough: the dough keeps traces of the spoon, falls from it in a shaped lump. If there is not enough flour, add and knead a little. Tighten the finished dough with cling film or simply cover with an inverted plate and leave on the table for thirty minutes before frying.

Heat vegetable oil in a frying pan until hot. Take the dough with a spoon and put it in the form of pancakes at a short distance from each other in boiling oil. Fry the products for two to three minutes at medium-low temperature, without a lid, until the bottom crust is well browned. The dough should rise well during frying.

Turn the pancakes over to the other side and fry for another two to three minutes.

Remove the finished pancakes from the pan and transfer them to a plate with a paper towel so that it absorbs the excess oil.

Place the dried pancakes on a serving dish and serve immediately while they are hot and especially soft. Fresh sour cream will be an ideal addition.
