Unusual red currant and gooseberry jam will conquer you with its balance of sweetness and acidity, as well as its homogeneous composition, because it is prepared on the basis of berries that have been previously mashed or squeezed out of juice.

Sort the gooseberries, wash, remove the tails from both sides. Transfer the berries to a deep bowl and use a potato pusher to crush the gooseberries until they burst.

Wash red currants, dry and remove excess. Rub through a sieve and discard the cake.

Add all the granulated sugar to the red currant puree, stir and bring to a boil over medium heat. Remember to stir and remove the foam.

Grate the gooseberries through a sieve into a puree. Add gooseberries to the currant syrup.
