Ossetian flat cakes or pies are very satisfying, nutritious pastries. Potatoes and various combinations with them are often used as a filling. Stuffed tortillas are prepared both in the oven and in a pan. In this recipe, we will use cheese and herbs to fill the pie, and we will cook on the stove in a frying pan. We knead the dough classic, yeast: it will give a light airy crumb and a ruddy dense crust.

Prepare the dough immediately. To do this, pour milk into a bowl and heat it until warm. Pour dry yeast into milk, add granulated sugar and salt in the specified amount. Mix thoroughly to dissolve all grains. Break the egg and pour in the vegetable oil, mix. Pour the sifted flour in portions and knead the elastic soft dough. We roll it into a smooth ball, put it in a bowl, tighten it with cling film and put it in a warm place. An hour later, when the volume of the mass increases, we knead it with our hands and leave it to come up again. When the dough doubles again, proceed to shaping the cake.

To prepare the filling, rinse and dry the beet tops and greens thoroughly. I also wash the green onions and lettuce and put them on a towel so that all the moisture is glass. Grind the prepared greens with a knife and place in a bowl.

Rub hard cheese on a fine grater. Pour the resulting shavings into a bowl with herbs. We also add adjika, black pepper, salt and granulated sugar to taste.

Mix all the ingredients of the filling thoroughly.

We take the dough that has come up to this time from the bowl, knead it slightly and put it on a work surface greased with vegetable oil. Using a rolling pin, roll out the dough into a round layer.

Put the prepared filling in the middle of the rolled dough.

Raise the free edges of the cake, put it together and pinch tightly over the filling. We lightly press the resulting "bag" with the palm and lightly go over the top with a rolling pin to make the cake more even and flat.

Heat the pan on the stove until hot. The plate temperature is low. Add some odorless vegetable oil. Carefully transfer the formed cake from the working surface to the hot pan, close the lid and fry until golden brown appears from below. This will take approximately seven to ten minutes. After that, open the lid, gently turn the cake over with a flat wide spatula and continue to fry it under the lid for the same amount. Remove the finished cake from the pan and transfer to a serving plate. Serve hot.
