It is better to take the meat from the shoulder or neck. Wash the pork, dry it and cut into slices 1.2-1.5 centimeters thick. Cover each piece of meat with cling film and beat with a kitchen hammer. Fold the broken pieces into a bowl, sprinkle them with salt, spices and pour with two tablespoons of sunflower oil, mix the meat gently and leave to marinate for 1-1.5 hours.
